The beauty of Despina’s cooking lies in its simplicity and its reliance on the freshest ingredients. You will sit down to a welcome snack of seasonal Greek appetizers, such as Despina’s tangy, succulent stuffed grape leaves, which she will encourage you to dip in yogurt, and her bright, fresh potato salad. She will serve you Greek mountain tea, a medicinal herbal tea with a mild mint flavor that grows wild in Greece.
During your workshop, Despina will teach you how to make spanakopita (spinach, dill, and scallions mixed with feta and baked between sheets of phyllo dough), fasolada (bean soup with vegetables and Greek olive oil), and bouyiourdi (baked feta with tomatoes, peppers, and oregano in pita).
You’ll leave Despina’s home inspired to share her stories and cook her food, which we’ll make easy with a packet of Despina’s family recipes and a shopping guide to her favorite markets.
