Hi Jaquin, I have recipes for two lots of muffins but you can use any fruit that is soft :Banana and Chocolate Chip Muffins :1 1/2 cups flour, 1 cup sugar, 1 teaspoon baking soda, 1/2 teaspoon salt 3 medium ripe bananas, 1 large egg, 1/3 cup vegetable i 1 teaspoon vanilla & 1/2 cup chocolate chips. In a large bowl, combine dry ingredients. In another bowl, mash the bananas. Add egg, oil and vanilla mix well. Stir into the dry ingredients just until moistened. Fill greased or paper lined muffin cups half full. Bake at 375 degrees for 25 mins or until you can put in a skewer and pull it out clean. Cool and put on wire rack. This recipe makes 6 large ones or 12 small ones. I only make the large ones and they take about 1/2 to bake.
The other recipe is the same as for the banana but instead of banana and choc. chips, use the zest of one lemon and the juice, 1 teaspoon of chopped Rosemary (herb) and one tin of Apricots.
